crystalball2013Gathered from the wishes of our staff and readers, we present our annual KosherEye culinary wish list. Several “unfulfilled wishes” return from past years. Although some of these items may be available in large, metro areas, our readers across the country hope to see them more accessible locally and on the Internet.

  • Clean kosher restaurants with sanitation grade A, smiling capable wait staff, caring management, quality food and fair pricing. Let us know when you find kosher restaurants with these attributes. We would like to write about them. We also wish that kosher restaurants would be so excellent that many of their patrons were not even there because it is kosher.

  • Food trucks and pop-up restaurants rolling across the U.S.

  • Fish sauce, Oyster sauce

  • Duck breasts

  • Washed, ready−to−eat packaged greens such as kale, chard, romaine and leafy vegetables

  • Healthful and ready to heat meals in family sized portions

  • Lingonberry preserves

  • More and better kosher airline food

  • More fine kosher cheeses

  • More fresh–frozen fish

  • Bailey’s Irish Crème liqueur. More kosher sherry, brandies and fine kosher liqueurs

  • Sherry vinegar, Champagne vinegar, Truffle vinegar

  • Bread and AP Flour in cup measurement units within 5 lb. packages

  • More kosher certified store brands

  • Poultry without residual hair shafts and feathers

  • Online vendors listing specific kosher certification, rather than just  term “kosher”

  • A more unified and complete kashrut listing in a central online location.

All of the recipes we received were wonderful and it was not easy for us to select the ones we submitted to Red Star for the final decision.

And how did Linda and Kelly from Red Star make the final decision?
"For judging the entries, we looked at content, pictures and their experience using our Platinum yeast.

We loved reading about Judy Stern’s excitement to try the Platinum, and also about her success with the product.  Her soft onion rolls were beautiful and would make a great addition to a holiday dinner or for leftover sandwiches.

Lynn Teichman made a recipe using whole wheat flour, which we loved.  She had incredibly detailed photos of the bread making process and we liked how she showed two different ways to make the breads.

Diane Krutsch had nice comparison photos of rolls made with Platinum and with another yeast. The Platinum rolls looked so light and fluffy!"

We thank everyone who entered – the quality of the recipes and the accompanying pictures were terrific. We have some very good bakers out there. KosherEye thinks that every entry was a winner. We have posted the three winning recipes, and plan to post more in the coming weeks.

Kosher Latke Cook-off
The Event

Whole Foods Briarcliff, Atlanta, GA sponsored the first–ever Whole Foods Kosher Latke Cook–off competition. Team KosherEye (yours truly) competed against the fabulous, talented Whole Foods Demo Teams of Elisheva Robbins and Steve Rosetti. Whole Foods Team member Matt assisted.  They grated – we didn't because we used frozen hash browns – we mixed, and we fried! In addition to our Fast, Fabulous Potato Latkes In–A–Hurry recipe, Elisheva prepared Sweet Potato Latkes and Steve prepared traditional Potato Latkes. Steve used a hand grater, Elisheva used a VitaMix Blender for grating and KosherEye used readymade frozen and defrosted grated potatoes. Toppings included fresh apple and pear sauce, sour cream and chives, nova, and a nova, cream cheese, caper, dill topping. What a fun time was had by all!

Old Jews Telling Jokes
Non-Stop Laughter off Broadway

Humor has always been considered Jewish Novocain. So, if you simply want to laugh and set aside your “tsuris”, we recommend heading right to the off–Broadway production of  the hilarious Old Jews Telling Jokes currently at the Westside Theater, 407 West 43rd St. in NYC.. Created by Peter Gethers and Daniel Okrent, Old Jews Telling Jokes showcases five actors in a revue that pays tribute to and reinvents classic jokes and one–liners of the past and present. The show also features comic songs as well as tributes to some comedy icons of the past. The production is based on the website that actually inspired the show: Old JewsTellingJokes.com. If you’ve ever had a mother or visited a doctor – Old Jews Telling Jokes will make you smile. The jokes span the passages of everyday life – personal, business, love, marriage, and old age. And as others have qvelled: “You’ll laugh ‘til you plotz”. Be aware, however,  that some of the humor is R–rated.

Separating Egg Whites/Yolks

An EGGciting Internet craze on YouTube! A new way to separate egg whites/yolks using an empty plastic soda bottle. We saw it demonstrated, live, at a cooking demonstration and LOVED the idea The original video is in Japanese − just watch the pictures as it is self explanatory! The second video is in English and is a "take" on the original. We are posting this one just in case you need further explanation. Wish that we would have thought of this – so easy and so clever!
