Kosher Without a Symbol

Can't remember what food items do not need a kosher certification? Well, wonder no more...the AKC (Atlanta Kashruth Commission) has published a list of these items and has generously shared it with KosherEye. Print the Kosher Without a Symbol list and carry it with you –  when in doubt, just refer to the list.

King Arthur Flour Sponsors
Sweet Victory Challenge at National Maple Syrup Festival

Amateur home cooks and bakers nationwide are invited to showcase their best recipes using maple syrup at this year’s Sweet Victory Challenge, sponsored by King Arthur Flour, at the National Maple Syrup Festival in Medora, Ind. with original recipes in one of three categories: Savory (Main Dish), Dessert, and Breakfast. Each recipe must include both King Arthur Flour and 100% pure maple syrup.

A panel of judges will select five finalists in each division/category based on creativity, appetizing description, ease of preparation, and appropriate use of the required products. On the competition days – March 3 for the youth division, and March 10 for the adult division – local volunteers and culinary school students will prepare each dish for final judging. Finalists need not be present to win. The grand prize for each category in the adult division is a KitchenAid mixer and a customized Indiana artisan ceramic pitcher; second prize will also receive a customized pitcher. In the youth division, first prize in each category is a $250 U.S. Savings Bond; second prize is a $100 U.S. Savings Bond. Each finalist will also receive a gift basket from King Arthur Flour.

maplesyrupcookingchallengeAll mailed and online entries must be received by 11:59 p.m. Eastern February 20, 2012. Finalists will be notified the following week. Complete rules and an online entry form are available at sweetvictorychallenge.com.

We Accepted the Challenge!

Ami Magazine invited KosherEye, along with five other cooks, to participate in a "Secret Ingredient"  Cooking Challenge. Included in the group were cookbook authors, food columnists, and leading kosher bloggers. The challenge? To create a recipe in a little over one week that included the "secret ingredient" — Smokey Flavored Baked Bits made by The Quality Choice, a division of Baker’s Choice. The recipes appeared in Whisk, the food section of Ami Living Magazine and we are delighted to share our creation, Smokey Mini Corn Muffins, which was inspired by our Southern heritage.

Mushroom Risotto by Chef David Kolotkin
Prime Hospitality Group

What a memorable feast we had at the pre–Kosherfest Social Media Dinner, which was held at the fabulous Solo restaurant in NY. We had to have it, and Chef David Kolotkin graciously shared his recipe for Mushroom Risotto with KosherEye. We are delighted to share it with our readers, and our fellow bloggers. Just thinking of this dish, which was served as an appetizer, makes us hungry! It can also work well as a main course. Let us know if you try it. We certainly are!
